Moroshka is one of the most common berries of northern latitude. It grows in the wild, and it is extremely difficult to cultivate, so it takes a special place in cooking.
What is this berry?
Moroshka is similar in appearance to raspberry, butthe plant is much smaller, only about 20 cm in height. It grows on acidic marshy soils and is extremely hardy, withstood temperatures of -40 ° C. Berries are usually easy to harvest, as they grow on vertical stems, with each stem containing only one berry. Plants begin to bloom in June, and berries usually ripen in July. First cloudberry has a red color, but then, as it ripens, it becomes a beautiful golden yellow color. The season of this berry is very short: often it disappears already in the middle of August.
Moroshka is rich in omega-3 fatty acids,vitamins and antioxidants. For this reason, the question often arises: how to prepare this tasty and healthy berries for the winter? Of course, you can freeze it, but to store it in this form will take a lot of space in the freezer. In the fresh form, the storage period is very limited. Therefore, the most suitable way is cloudberry jam.
This delicacy can be used by itself, butalso serve with waffles and pancakes. In addition, it can be used as an ingredient in other sweet dishes, as it has a mild flavor and a delicate aroma.
This berry contains a lot of benzoic acid,therefore, the cloudberry jam can be stored in the refrigerator for a long period of time and does not deteriorate. In addition, you can add to it half a teaspoon of citric acid or lemon juice for additional sourness in taste. So, how to make a cloudberry jam?
The following ingredients will be needed:
- 500 g cloudberry;
- 250 g of powdered sugar;
- ½ teaspoon of citric acid;
1. Preheat the oven to 180 ° C.
2. Spread (do not mix) cloudberries and sugar in two refractory bowls (or cake molds).
3. Place the bowls in the oven for about 20 minutes.
4. Carefully remove them from the oven and mix the sugar with cloudberries carefully.
5. You will get jam from cloudberry "pyatiminutka", which you should pour into prepared sterilized jars.
6. Close the jars with covers and leave to cool.
7. Keep such a jam of cloudberries ("pyatiminutka") should be in the fridge.
The second option
In addition, there is a classic version of this berry. Delicious jam from cloudberries can be obtained and by short-term cooking. To do this, you need the following ingredients:
- 1 kg of cloudberries;
- 350 grams of sugar.
Place cloudberries in a saucepan and mix it withsugar very carefully. Then bring to a boil and cook over low heat for 5-10 minutes. Transfer to glass jars in a hot state. When the cloudberry jam has cooled to room temperature, put the jars in the refrigerator.

Jam with these ingredients is not all to taste. Preparation of jelly, in turn, involves the use of only berry juice, without the addition of pulp and seeds. Below is an instruction on how to brew jam from cloudberry using one berry juice.
Wash and pick berries, separating the overripe andsubstandard. This can be done in deep containers or by soaking cloudberries in the sink. Then treat the selected berries with hot water for the purpose of disinfection.
Use a sieve and gauze to squeeze juice from the berries.
Drain the juice in a saucepan and put it on the stove,bring to a boil and gradually add sugar (its amount can be varied to taste, but the approximate proportion is 5.5 cups of sugar per 4 cups of juice).
Add a bag of pectin after the sugarcompletely dissolved. Stir the mixture continuously and bring it back to the boil. How much to cook jam from cloudberries? After the jelly begins to boil very strongly (the bubbles will continue to form, even when you continue to mix), snap 1 minute. At this time, thick foam starts to rise, so you should continue to stir the mixture, not allowing it to pour out of the pan.
When one minute passes, remove the saucepan from thefire and let it settle. You can see a layer of foam on top. Take a spoon and carefully remove it. Foam is also usable, so just put it in a separate bowl. You can eat it with tea or white bread.
Quickly pour out the prepared jam-jelly in advanceprepared banks, filling them not completely. The mash contains a large amount of natural pectin, so the jelly will freeze and harden very quickly.
